Renewal spur pruning
  (“Taille à côts”)

This is the traditional pruning method for top growths used in sweet wines. It is a short pruning method.

It eliminates all branches from the previous growing season, leaving only three short spurs (“côts”) each carrying two fruit nodes from which the fruit-bearing shoots of the new vintage will grow.

The “Sauternes fan” is made up of a trunk and two arms spread out and each carrying a spur.
